Paella is a traditional Spanish dish, and at Soca our paella consists of Spanish Calasparra rice, saffron, chicken, chorizo or pork and assorted seafood, cooked in a large shallow pan.
The traditional wide, shallow pan gives the dish its name—paella means “pan”in Valencian and Catalan—and it allows the rice to cook evenly without being stirred, which aids the formation of a crispy socarrat*.
**The socarrat is the crusty crispy bottom of the paella that becomes caramelized and toasted on the bottom of the pan when it is cooking..
Paella should never be confused with a risotto! Its texture, cooking technique, ingredients and tradition are all different.
At Soca we make our paella in a very large Paella pan, you will receive a serving of it. No two servings will be identical.
Our paella contains: Chicken, pork and assorted seafood.
We can not substitute, make exceptions, omit ingredients, or make changes to our paella.
Our paella is NOT gluten free, or vegetarian, it also does not contain nuts, however, we can not guarantee completely nut free.
We truly hope you enjoy our paella, as we try to bring our culture to Ottawa in the most authentic way possible!
