Main veg:

200g Roasted cauliflowet

200g Roasted beets - Beef

200g Roasted eggplant

Toppings:

Pickled red onions

Pickled carrots

Poblano chimichurri

Gremolata ( mix with vinaigrette)

Green mix

Sauces:

Pickle Aioli

Pineapple habanero hot sauce

Crema

Roasted red pepper sauce

Cocoa + Chiles

Black garlic vinaigrette

Assembly and re-heating instructions:

 

Tortillas:

In the Oven – Wrap a stack of four or fewer tortillas in a packet of aluminum foil and put it in a pre-heated 350° oven for 15-20 minutes, until heated through. You can do multiple packets of tortillas each all at the same time.

On the Stove-Top – Place the tortillas in a dry (no oil) stainless steel or cast-iron skillet over medium heat and cook them for about 30 seconds on each side.

Main Veg:

Transfer vegetables from to-go containers to a pan, let it heat on medium fire  for 15 minutes or until reaching an internal temperature of 165 F.

Or microwave on to-go containers until hot,

Serve the toppings chilled or at room temperature.
